Rich Chocolate Mousse

This chocolate mousse is simple and quick to make, and so much healthier than conventional chocolate mousse recipes or ready-made desserts, thanks to the low sugar content and beneficial antioxidants from the dark chocolate. But that doesn’t mean you’ll miss out on any of the flavour or enjoyment factor – it is lovely and rich so you’ll get your chocolate fix without over-indulging.

Ingredients – serves one
2 eggs, separated
75g dark chocolate, between 70-80% cacao solids
2 tbsp coconut sugar – we used Palmyra jaggery for its superior nutritional profile
25g unsalted butter

Melt the chocolate with the butter over a very gentle heat, then remove from the heat and let it sit for a minute. Meanwhile, whisk up the egg whites to form stiff peaks. In a small bowl combine the egg yolks and coconut sugar, and stir this into the melted chocolate. Then fold the whisked egg whites into the chocolate mixture carefully, until well incorporated. Divide between 4 glasses, ramekins or small bowls and refrigerate for a couple of hours or until set. Serve with fresh berries and your cream of choice.
