Orange and Almond Cake

Aside from the simple prep in advance, this wonderfully flavoured orange and almond cake is really easy and quick to make. It’s also a large cake, so great for sharing with friends and families, or even birthday parties. It’s sweetened naturally with honey, and full of fibre and protein, so it’s something you can feel good about indulging in from time to time.

Ingredients (makes one large cake)
2 large oranges – unwaxed
4 eggs
300g ground almonds
1 tsp bicarbonate of soda
8 tbsp runny honey

Place the oranges in a large saucepan, cover with water and bring to the boil. Then leave to simmer for about an hour, until soft. Then leave the oranges to cool for half an hour.

While the oranges are cooling, preheat the oven to 175 degrees C, then grease and line a 22 cm cake tin.

When the oranges have cooled, place them whole into a food processor and blend until smooth – yes you do put them in whole, skin, pith, pips and all! When the orange mixture is smooth, add the eggs and blend again, followed by the honey, ground almonds and bicarbonate of soda, before blending again until well combined.

Scoop the mixture into the prepared cake tin, and bake in the oven for about an hour until the top is golden brown and a skewer inserted into the middle of the cake comes out clean.

Leave to cool for 15 minutes before turning out onto a wire rack. When you’re ready, slice and enjoy!
