Gut-friendly chocolate lollies

On a hot Summer’s day it’s easy to reach in to the freezer and pick up an ice lolly. But how about making your own that benefits both your gut and your body.

These lollies are so easy to make, and kids absolutely love them. Alongside the many benefits of cacao, these lollies include a healing superstar – gelatin. Its properties go way beyond making jelly for parties; the right kind of gelatin includes a unique balance of amino acids that help to fight inflammatory processes in the body, repair tissue and promote healing of the gut lining, which can become too porous over time thanks to modern diet and lifestyle factors.

The collagen within gelatin is also a wonder ingredient for our skin, hair, nails, joints and connective tissue, plus gelatin contains minerals that promote strong bones.

Pour 50ml of the coconut milk into a bowl, and sprinkle the powdered gelatin over the top, setting it aside for 5 minutes to bloom. Gently heat the remaining coconut milk just until warm, then add the cacao powder, honey, vanilla and salt, whisking until smooth. Add in the coconut milk and gelatin mixture, whisking well until dissolved. Cool the mixture for an hour before pouring into lolly moulds and setting in the freezer.

Ingredients – makes 6-8 lollies (mould-size depending)
1 x 400ml tin Coconut milk – full fat
2.5 tbsp raw cacao powder (or cocoa powder)
4 tbsp raw honey (or maple syrup)
2 tsp unflavoured powdered bovine gelatin (such as Great Lakes brand)
1 tsp vanilla extract
Tiny pinch fine sea salt
