Almond Pancakes

These American-style pancakes are really simple, delicious and nutritious, and being high in protein, plus free from cereal grains and refined sugar, will prevent blood sugar crashes and keep you feeling fuller for longer.

They are great for kids and adults alike, just increase the quantity of the mixture depending on how many people you’re serving – cook enough for leftovers too as they also make a great healthy snack to keep cravings at bay.

Ingredients (makes 6-8 small pancakes)
2 eggs
6 tbsp ground almonds
2 tbsp ground flaxseeds
2 tbsp coconut sugar or raw honey
½ tsp vanilla extract
1 tbsp coconut oil for frying

In a large bowl, beat the eggs, then add the rest of the pancake ingredients and whisk together until smooth. Heat the coconut oil in a medium non-stick frying pan, and add one heaped tbsps of the mixture per pancake, adding as many as your pan can comfortably hold.

Keep the heat relatively low to avoid burning and cook the first side for about a minute, you should see bubbles forming when they are ready to flip. Then cook on the second side just for 30 seconds or so, until golden brown. Serve with berries and perhaps some plain live, or coconut yoghurt.
