Low Sugar Granola

This granola is really easy to make, packed full of nuts and seeds, and much lighter on sugar than shop-bought alternatives. It’s a great, healthy option for busy mornings, or when you need a healthy snack, keeping you feeling full and preventing blood sugar crashes.

Pair it with your milk of choice, or full fat organic plain or dairy-free yoghurt, and some fresh berries.

Ingredients (makes 10-12 servings)
280g oats – gluten-free (if required)
120g chopped mixed nuts, your choice
60g mixed seeds, your choice
60g raisins, or other unsweetened dried fruit
4 tbsp coconut oil
3 tbsp maple syrup
1/2 tsp vanilla extract
1 heaped tsp cinnamon
Pinch sea salt

Preheat the oven to 150 degrees C. You’ll need baking sheets.

Gently melt the coconut oil in a large sauce pan, then add the other ingredients apart from the raisins, and mix really well to combine and coat everything well.

Spread out the mixture evenly over the two baking sheets and place in the oven for ten minutes. Remove from the oven, mix through the raisins and then bake again for 15 minutes until lightly golden.

Allow to cool on the baking trays before storing in a large, airtight container like a mason jar with – keeps for about 2 weeks if stored in a cool, dry place.
